Fleming graduated from the Danish Hotel & Restaurant School with honors. He arrived as a legal immigrant in the US, to what he thought was an executive position at my Prince Hamlet Restaurant in the 1970’s. However, the only position open at the time was for a dishwasher. Fleming was not going back to Denmark, so he accepted the position, because failure, for him, was not an option.

A few years later, Fleming found his niche as the Maitre’ D’ at the world renowned Chez Vendome in Coral Gables, Over the years Fleming built a following bar none. He became known for never forgetting a name, a face, his guest’s favorite food, their likes and dislikes, to the point of having an almost spooky memory.


Being the entrepreneur that Fleming is, he saw an opportunity to open his own little restaurant on US 1 in Miami where he built a reputation for quality, consistency and value…until hurricane Andrew wiped out his restaurant… but that didn’t stop Fleming. He picked up the pieces and re-opened his AWARD WINNING restaurant Fleming “A TASTE OF DENMARK’, just a little further south. His loyal clientele made him an instant success.  Every night the restaurant opened to a sold out crowd, year after year until the young restaurateur envisioned his next gastonomical experience.


Chef Else got her chef training at culinary school and several international award winning Danish restaurants. Visiting family in Miami and meeting Fleming, she made good use of her chef training by capturing Fleming’s heart through his stomach, and they have since  “lived happily ever after”… Chef Else and Fleming sold their restaurant in South Miami and opened COPENHAGEN restaurant on US 1 in Delray Beach to a full house every night, even in the summertime!


Following up from Copenhagen in Delray Fleming & Else Bistro was opened in Boca Raton and enjoyed success thanks to all of the customers both old and new. 


Flemings newest establishment, Copenhagen Restaurant in Boynton Beach will soon become the TALK OF THE TOWN and it is recommended to make reservations weeks in advance. The menu will have many past winners and several new savory choices that Fleming and Else discover on their culinary voyage.
